Grilled Game Hen with Onion
We love game hen. They are inexpensive and the perfect size for the two of us. This recipe involves flattening the game hen, then grilling it while basting with a mop of vinegar, sliced onions, jalepeno and spices. The game hen finishes on the grill with the onions on top.
Sunday Sauce and Meatballs
There is not much more satisfying than a big pot of meatballs and homemade tomato sauce on a Sunday. This recipe has evolved much over the years. Originally, the recipe used many more ingredients and took a lot more time and effort. Our cooking philosophy lately, however, has focused on simplicity and obtaining the most flavor from fewer, higher quality ingredients. There are many recipes for meatballs in sauce, and this is our favorite. It also makes for great, freeze-able leftover portions — either for Kelly to heat up some night when I’m out of town for work, or for delicious (and really easy) meatball pizza later in the same week.

Italian Fish with Tomatoes and Olives
This is one of our favorite weeknight recipes — super fast and absolutely delicious. We’re trying to introduce more fish into our diets, but this is sometimes a challenge because Kelly does not like most fish dishes. But Kelly is a huge fan of both tomatoes and olives, and the tilapia in this recipe is light and mild. On this particular night, we even used some of our own tomatoes from our garden.
